Ingredients

Method

You’ll need: frying pan · chopping board · knife · wooden spoon

  1. Wash the broccoli and divide it into small florets. Peel thicker stalks if needed and cut them into thin pieces.
  2. Heat the sesame oil in a large frying pan and fry the broccoli over a high heat until lightly browned but still tender-crisp.
  3. Crack the eggs straight into the pan. Let them set briefly, then stir roughly with the broccoli to make juicy pieces of egg.
  4. Season with soy sauce and toss everything in the pan for a moment longer. Sprinkle over the sesame seeds and let them toast lightly.
  5. Serve straight away. It doesn't need much alongside – it works well on its own.

Good to know

When it needs to be quick, this stir-fry is exactly my thing. Warm, savoury and made without much effort. A meal like this often saves a busy weeknight.

Swaps

Sesame oil → olive oil (more monounsaturated fats), soy sauce → tamari (often gluten-free), sesame seeds → chopped almonds (provide vitamin E and magnesium), eggs → tofu (a plant protein source)

Allergens

Contains egg, sesame and usually soya; depending on the soy sauce, also gluten. Suits children well if the sesame is scattered finely, and during pregnancy it's important that the eggs are cooked through. Contains: soya.
