Ingredients
250 g beef minute steaks
2 wholemeal tortilla wraps (without seed oils)
4 tbsp hummus (made with olive oil, no seed oils)
1 handful of rocket
½ cucumber
1 tbsp olive oil
1 pinch of sea salt
1 pinch of black pepper
Method
You’ll need: frying pan · chopping board · knife
Season the minute steaks with sea salt and black pepper. Heat the olive oil in a frying pan until very hot and sear the meat briefly on both sides.
Take the steaks out of the pan, leave to rest briefly, then cut into thin strips.
Cut the cucumber into thin sticks and wash the rocket. Lay out the wholemeal tortilla wraps and spread each one with hummus.
Arrange the beef strips, rocket and cucumber sticks on the lower part of the wraps. Keep the filling compact so the wraps roll up easily.
Fold the bottom edge up, then fold in the sides and roll the wraps up tightly.
Good to know
When it needs to be quick, a wrap like this is worth its weight in gold. Savoury, fresh and pleasantly satisfying without feeling heavy.
Swaps
Beef minute steaks → chicken breast (lean protein); hummus → mashed avocado (more monounsaturated fats); wholemeal tortilla wraps → large romaine lettuce leaves (fewer carbs, extra crunch); rocket → baby spinach (milder flavour, provides folate, among others)
Allergens
Contains gluten from the wraps, and sesame (tahini in the hummus). Easy to make milder for children; during pregnancy it's a good choice as long as the beef is cooked all the way through. Contains: sesame.
