Trim and halve the green beans. Cut the carrots into thin matchsticks or coarsely grate them, and finely dice the onion.
Heat the olive oil in a large frying pan. Fry the beef mince with the onion, breaking it up until crumbly.
Add the green beans, carrots and cumin. Keep frying until the veg is tender-crisp and the mince is well browned.
Deglaze with the soy sauce. Season to taste with sea salt and black pepper and toss briefly.
Serve the bowl hot straight away. A fried egg goes well with it, if you like.
Good to know
This is what a quick stir-fry looks like when it really hits the spot. Hearty, warm and without much effort. Just right for days when things need to be simple.
Swaps
Beef mince → turkey mince (similar protein content) | Green beans → broccoli (provides fibre and vitamin C) | Soy sauce → tamari (gluten-free alternative with a similar flavour) | Olive oil → ghee (heat-stable and aromatic; contains milk)
Allergens
Contains soya and gluten (soy sauce; tamari is gluten-free). Use the soy sauce sparingly for children; in pregnancy, the dish is fine as long as the beef mince is cooked right through. With a fried egg, the dish contains egg; in pregnancy, fry it until the yolk is firm.
