Fry the beef mince in a hot frying pan, breaking it up into crumbs, until browned. Season with cumin, salt and pepper.
Wash the romaine lettuce, spin it dry and tear it into bite-sized pieces. Chop the cucumber and pepper into small pieces.
Dice the avocado and add it carefully to the salad with the rest of the vegetables. That way it keeps its shape.
Stir the olive oil and lime juice together in a small bowl. Season to taste with a little salt and pepper.
Divide the romaine lettuce between plates or bowls and top with the cucumber, pepper and avocado. Spoon the warm beef mince over the top.
Drizzle with the lime dressing and serve straight away.
Good to know
When it needs to be quick, I especially like salads like this. Warm mince, fresh crunchy bits and a fresh dressing make it pleasantly easy.
Swaps
Beef mince → chicken mince (milder, still plenty of protein); Romaine lettuce → baby spinach (more folate); Pepper → tomatoes (also provides vitamin C, plus lycopene); Olive oil → avocado oil (milder flavour, similar unsaturated fat content)
Allergens
The recipe is naturally gluten-free and dairy-free; check for any individual allergies. Season mildly for children, and during pregnancy cook the beef mince all the way through and wash the lettuce and vegetables thoroughly.
