Quick beef and broccoli stir-fry
Quick beef and broccoli stir-fry with tender sirloin steak, broccoli, garlic, ginger and soy sauce – a full-flavoured, high-protein pan dish for every day.
Cut the sirloin steak across the grain into thin strips. Stir the soy sauce, water and cornflour together in a small bowl.
Divide the broccoli into small florets. Finely chop the garlic and grate the ginger.
Heat the olive oil and a little sesame oil in a large frying pan or wok. Fry the beef briefly over a high heat until it takes on colour outside, then take it out again.
Add the broccoli, garlic and ginger to the pan and fry briefly. Pour in the soy sauce mixture and cook the broccoli until tender-crisp.
Return the beef to the pan and toss everything briefly until the sauce thickens slightly. Finally, sprinkle over the sesame seeds.
Serve the stir-fry hot, straight from the pan. Rice or cauliflower rice goes well with it.
Good to know
When it needs to be quick, a hot pan like this is worth its weight in gold. The dish is full of flavour, juicy and on the table without much effort.
Swaps
Sirloin steak → chicken breast (slightly milder, similar protein content) | Broccoli → mangetout (a little more delicate, also provides fibre) | Cornflour → arrowroot (often thickens a little more finely) | Sesame oil → avocado oil (more heat-stable and more neutral in flavour)
Allergens
Contains soya, sesame and gluten (soy sauce); tamari is a gluten-free alternative. For children, best made with less soy sauce and mild ginger; in pregnancy, serve it well heated through and cook the beef right through.
