Ingredients
4 bananas
2 tbsp peanut butter
2 tbsp oat granola (without added sugar or seed oils)
Peel the bananas, slice them and freeze completely until solid.
Put the frozen banana slices in a powerful blender or food processor and blend, slowly at first, then more vigorously.
Scrape the mixture down with a spatula from time to time so everything blends evenly. Blend until the nice cream is creamy, like soft-serve ice cream.
Divide the nice cream between bowls straight away and top with peanut butter.
Scatter over the granola, cacao nibs and Ceylon cinnamon. Drizzle over a little maple syrup if you like.
Serve immediately, while the nice cream is at its creamiest.
Good to know
When you want something cold, creamy and quick, this nice cream is just right. It tastes like a little dessert but gets by with a few honest ingredients.
Swaps
Peanut butter → almond butter (provides vitamin E; contains tree nuts) | Oat granola → chopped walnuts (provide omega-3 fatty acids; contain tree nuts) | Maple syrup → date syrup (also provides small amounts of minerals) | Cacao nibs → dark chocolate pieces with no refined sugar (milder in flavour)
Allergens
Contains peanuts and gluten (oats) unless the granola is labelled gluten-free; depending on the granola, it may also contain other nuts. Suitable for children if the texture and toppings suit their age, and fine in pregnancy with fresh ingredients.
