Ingredients

Method

You’ll need: oven · frying pan · chopping board · knife

  1. Preheat the oven to 200 °C (180 °C fan). Wash and core the apples and cut them into thick wedges.
  2. Melt the coconut oil in an ovenproof frying pan. Add the apples and gently toss them with the honey, Ceylon cinnamon and nutmeg.
  3. Put the pan in the oven and bake at 200 °C for 12–15 min until the apples are soft and lightly coloured at the edges.
  4. Meanwhile, stir the Greek yoghurt with the vanilla extract until smooth. Roughly chop the walnuts.
  5. Take the baked apples out of the oven and leave them to cool slightly so the flavours settle.
  6. Divide the warm cinnamon apples between bowls, spoon over the vanilla yoghurt and scatter with walnuts.

Good to know

When it's a bit grey outside, this dessert makes everything feel cosier straight away. Warm, creamy and on the table in no time.

Swaps

Honey → date paste (also provides fibre); Greek yoghurt → skyr (also provides protein); Walnuts → almonds (provide vitamin E); Coconut oil → ghee (buttery flavour, heat-stable; contains milk)

Allergens

Contains milk and walnuts (tree nuts). Well suited to children if the nuts are finely chopped or left out as needed – no honey for babies under one year old. In pregnancy, fine in normal kitchen amounts – ideally use alcohol-free vanilla extract.
