Ingredients
1 wild salmon fillet (about 150g)
1 tbsp white almond butter
50g edamame beans (shelled)
1 small handful of baby spinach
½ ripe avocado
1 squeeze of lemon juice
1 tsp black sesame seeds
Method
You’ll need: frying pan · mixing bowl · sieve
Pat the wild salmon dry and cook it in a frying pan with olive oil over a medium heat until it's still slightly translucent in the middle or cooked right through. Then let it rest briefly. In pregnancy, cook the salmon all the way through.
Cook the edamame according to the packet instructions and drain well. Wash the baby spinach and scoop the avocado out of its skin.
Stir the almond butter with the lemon juice and a little water until smooth and you have a creamy dressing. Season lightly with salt to taste.
Put the baby spinach in a bowl and arrange the edamame and avocado on top. Flake the wild salmon into rough pieces and place it on top.
Drizzle the almond butter dressing over the bowl and sprinkle with black sesame seeds.
Serve straight away so the spinach stays fresh, the avocado is nice and creamy and the salmon is still slightly warm on top of the other ingredients.
Good to know
When it needs to be quick, I especially like bowls like this one. It's fresh and creamy but still pleasantly easy. The warm salmon fillet really rounds it off.
Swaps
Wild salmon → trout (also provides protein and omega-3 fatty acids); almond butter → tahini (contains calcium and unsaturated fats, among others); baby spinach → rocket (brings similar bitter notes and folate); edamame → chickpeas (more fibre and also plant protein).
Allergens
Contains fish, almonds and sesame; edamame are soya. Easy to adapt for children if you go easy on the sesame and check the salmon carefully for bones; during pregnancy, salmon cooked right through is the safe choice.
