Ingredients

Method

You’ll need: saucepan · wooden spoon

  1. Put the milk and short-grain rice in a pan and bring slowly to the boil. Stir now and then.
  2. Let the rice simmer gently over a low heat until soft and creamy. Stir a little more often if needed so nothing sticks.
  3. Heat the frozen cherries in a small pan and stir in the coconut sugar and cinnamon. Let the fruit cook down briefly until hot and juicy.
  4. Take the rice pudding off the heat and only now stir in the vanilla protein powder. This keeps the texture smoother and the powder clumps less.
  5. Stir the rice pudding thoroughly and let it stand for a moment. This makes it even creamier.
  6. Divide the protein rice pudding between bowls and spoon the hot cherries over the top. Serve with a little extra cinnamon if you like.

Good to know

Sometimes you just want something warm from a bowl. This is exactly that kind of recipe: creamy, fruity and pleasantly simple. Sweet, but not overloaded.

Swaps

Milk → unsweetened skyr drink or lactose-free milk (more protein). Coconut sugar → date paste (less processed). Cherries → berries (usually more fibre). Short-grain rice → oats (more fibre; oats contain gluten unless certified gluten-free).

Allergens

Contains milk and, depending on the product, milk protein in the vanilla protein powder; generally suitable for children if the protein powder is chosen to suit their age, and usually fine in pregnancy as long as all dairy products are pasteurised.
