Ingredients

Method

You’ll need: saucepan · chopping board · knife · wooden spoon

  1. Put the oats, oat milk, coconut milk and a pinch of salt in a small saucepan and stir together.
  2. Simmer everything gently over a medium heat, stirring regularly, until the porridge is creamy and has thickened slightly.
  3. Take the pan off the heat and quickly stir in the protein powder until smooth.
  4. Peel the mango, cut the flesh away from the stone and dice it finely.
  5. Taste briefly and, if needed, let the porridge rest for a moment so it firms up a little.
  6. Divide between bowls and serve with the mango and coconut flakes.

Good to know

When you want something warm and creamy in the morning that still feels light, this porridge is just right. The sweetness of the mango goes beautifully with the mild coconut.

Swaps

Oat milk → unsweetened almond milk (a milder base; contains tree nuts). Mango → berries (also provide fibre). Coconut flakes → chopped almonds (contain protein and vitamin E; tree nuts).

Allergens

Contains gluten (oats, unless labelled gluten-free) and milk (whey protein powder); good for children if served mild and not too hot, and in pregnancy pasteurised dairy and carefully prepared fruit are the safe choice.
