Ingredients

Method

You’ll need: microwave

  1. Mix the chocolate protein powder and cocoa powder thoroughly in a large ceramic mug.
  2. Add the egg and almond milk and stir everything with a fork into a smooth batter.
  3. Press the chocolate into the middle of the batter so the centre stays soft.
  4. Microwave the mug cake at 800 watts for 60–90 sec until the top has only just set and the middle is still soft. In pregnancy, cook it until the middle is firm too.
  5. Leave it to stand briefly so it settles and the centre stays creamy.
  6. Serve warm and eat it straight from the mug.

Good to know

When it needs to be quick and you still want something warm and chocolatey, this mug cake is just right. Soft inside, molten in the middle and ready in a few minutes.

Swaps

Almond milk → unsweetened coconut milk drink from a carton (often a little creamier). Chocolate protein powder → unsweetened whey or pea protein plus a little more cocoa (often a shorter ingredient list). Egg → 2 tbsp Greek yoghurt (also brings protein and usually makes the crumb softer).

Allergens

Contains egg and tree nuts (almond milk); check the protein powder and the chocolate for milk. For children, only small portions because of the cocoa. In pregnancy, use pasteurised ingredients and microwave the cake until it is set all the way through so the egg is fully cooked – the molten centre then comes from the chocolate alone. Contains: tree nuts.
