Potatoes boiled in their skins with caraway, served with herb butter made with parsley, chives and garlic. The classic family-friendly side for a raclette dinner.
You’ll need: saucepan · chopping board · knife · sieve
A raclette isn't a raclette without potatoes boiled in their skins. Caraway in the cooking water makes them more aromatic, and the herb butter is for anyone who wants a potato without cheese in between. Wrapped in a tea towel, they stay warm for a long time.
Butter → olive oil with herbs (vegan). Caraway → bay leaf in the cooking water. Parsley → dill. Potatoes → baby potatoes (shorter cooking time).
Use waxy potatoes – they're less likely to split as they cook. Letting them steam off in the open pan dries the skins.
