  1. Boil the potatoes in their skins for 20 to 25 min until tender, peel them while still warm and slice them.
  2. Finely dice the onion and bring it to the boil with the stock, cider vinegar, salt and pepper. Pour the hot liquid over the warm potatoes and leave them to soak for 20 min.
  3. Stir together the mustard, olive oil and yoghurt and fold the mixture into the potatoes.
  4. Slice the cucumber thinly, snip the chives and mix both into the salad.
  5. Put the chicken sausages into hot but not boiling water for 8 min and serve them with the potato salad.

Good to know

In many German families, potato salad is the Christmas Eve meal, because it can be made ahead. Here it comes with chicken sausages and skips the mayonnaise: the warm stock and vinegar soak into the potatoes, and yoghurt and mustard make it creamy.

Swaps

Chicken sausages → beef sausages or pea-based vegan sausages (without seed oils). Yoghurt → skyr. Cucumber → radishes. Chives → dill.

Cooking tips

Pour the liquid over the potatoes while they're still warm so they soak it up. Choose chicken sausages made only from poultry, with a short ingredient list and no pork casing.

Storage

Salad without the cucumber, 2 days in the fridge; fold in the cucumber fresh.

Allergens

Gluten-free if the chicken sausages are gluten-free; contains mustard and milk (yoghurt). Suitable for children. In pregnancy, heat the chicken sausages until steaming hot.
