  5. Divide the pomegranate seeds between heatproof glasses and pour the punch over them.

Good to know

Pomegranate juice is tart and fruity, and rosemary adds a resinous note. With the seeds in the glass, the punch looks festive. It goes with raclette or fondue on New Year's Eve and suits anyone who doesn't drink alcohol.

Swaps

Pomegranate juice → cherry juice. Rosemary → 2 thyme sprigs. Maple syrup → honey (if it doesn't need to be vegan). Orange juice → apple juice (milder).

Cooking tips

Remove the seeds from the halved pomegranate under water so the juice doesn't splash. Use unsweetened 100 % pomegranate juice, not nectar.

Storage

Without the orange slices and seeds, it keeps cooled in the fridge for 3 days; the seeds keep in the fridge for 5 days.
