Good to know

Pistachio has been everywhere since Dubai chocolate – here it's in your mug. The nuts are blended with milk and heated with cardamom, as in a Persian pistachio milk. There's no coffee, so it's something for an afternoon with the kids, too.

Swaps

Milk → almond milk (vegan with maple syrup). Honey → date paste. Cardamom → cinnamon. Pistachios → 1 tbsp pistachio butter (no blender needed).

Cooking tips

Use unsalted, shelled pistachios. If you soak them in hot water for 30 minutes, they blend more finely.

Drink it fresh; uncooked pistachio milk keeps in the fridge for 2 days.
