Pink strawberry and cashew smoothie with strawberries, cashews, almond milk, chia seeds and honey – creamy, mildly nutty and fruity for a quick start to the day.
You’ll need: blender · sieve
This smoothie is mellow, creamy and pleasantly fresh. It tastes of summer without coming across as sweet. Just right when you want something small in a glass.
Cashews → blanched almonds or macadamias (almonds contain vitamin E; both give a creamy texture) Runny honey → 1–2 stoned dates or a little mashed banana (sweetness from whole fruit, plus fibre and micronutrients) Unsweetened almond milk → unsweetened coconut milk from a carton, or organic whole milk if it agrees with you (often fewer additives; coconut gives more creaminess, whole milk also adds protein but isn't dairy-free) Chia seeds → oats or ground linseed (both provide fibre; linseed also contains alpha-linolenic acid; oats contain gluten unless labelled gluten-free)
Contains tree nuts (cashews and almonds from the almond milk). Honey isn't suitable for children under 12 months; in pregnancy, the ingredients are usually fine in normal kitchen amounts, as long as they agree with you.
Strawberries mainly provide vitamin C, plus folate, manganese and various polyphenols. Their natural sugar content is moderate compared with many other fruits.
Soaking mainly changes the texture, not the nutrient content as such. Cashews still provide unsaturated fatty acids, magnesium, copper and a little iron.
Even small amounts provide fibre and a little alpha-linolenic acid. Their contribution is more of an extra than a big one, but it's still worthwhile.
Honey mainly contains glucose and fructose, plus only small amounts of other compounds. They're there, but not in amounts worth overrating.
It can, especially with larger amounts of cashews or chia seeds. If you're sensitive to ingredients with a lot of fibre or fat, start with a smaller portion.
