Pepper rings with fried egg and turkey breast: a quick pan recipe with egg, pepper and olive oil – savoury, simple and with plenty of protein.

At a glance

Ingredients

Method

You’ll need: frying pan · chopping board · knife · spatula

  1. Wash the pepper, cut off the ends and slice it into thick rings. Cut the turkey breast into small pieces.
  2. Heat the olive oil in a frying pan and put the pepper rings in. Fry briefly until they start to soften.
  3. Crack an egg into each pepper ring. Scatter the turkey breast over the top and season with salt.
  4. Cook everything over a medium heat until the egg white has set. If you like, cover the pan briefly so the egg yolk sets a little faster on top (in pregnancy, until it is firm).
  5. Carefully lift the pepper and fried egg rings out of the pan with a spatula. Make sure the rings stay whole.

Good to know

A breakfast like this takes little work and still looks like more. The pepper holds everything in shape, and the egg sets gently in the middle.

Swaps

Turkey breast → chicken breast (similar protein content), olive oil → ghee (heat-stable; contains milk), pepper → courgette rings (milder, and just as veg-based), egg → extra egg white plus one whole egg (more protein)

Allergens

Contains egg. The recipe is good for many children if the pepper is cooked until soft. In pregnancy, cook the egg right through and use cooked, ready-to-eat turkey breast heated until steaming hot.
