Ingredients

Method

You’ll need: frying pan · chopping board · knife

  1. Get wooden skewers ready and have the tofu, peanut butter, lime juice, garlic, maple syrup, soy sauce and olive oil to hand.
  2. Press the tofu well between clean tea towels and cut it into even cubes. That way it browns more nicely in the pan later.
  3. Stir the peanut butter, soy sauce, lime juice, maple syrup and finely chopped garlic into a smooth, creamy sauce. If needed, stir in a small splash of water.
  4. Thread the tofu cubes onto the skewers and fry them all over in a frying pan with olive oil until golden brown and slightly crispy on the outside.
  5. Take the skewers out of the pan and brush them with the peanut sauce while still hot, so it sticks well and stays warm.
  6. Arrange the peanut tofu skewers on a plate and serve the rest of the sauce alongside.

Good to know

When it needs to be quick but should still taste really good, these skewers are a strong choice. Golden brown outside, juicy inside, with a creamy sauce full of character.

Swaps

Peanut butter → almond butter (a little more vitamin E) | Soy sauce → tamari (gluten-free with the same savoury flavour) | Maple syrup → date syrup (a few more minerals, but still use it sparingly) | Olive oil → avocado oil (stable at high heat and mild in flavour)

Allergens

Contains soya and peanuts. For children, only serve in suitably small, safe pieces; during pregnancy, well-cooked tofu and fresh, cleanly prepared ingredients are usually no concern. Contains: gluten (soy sauce).
