Ingredients
100 g almond flour
3 tbsp peanut butter
30 g dark chocolate (sweetened with dates, dairy-free)
2 tbsp maple syrup
1 pinch of vanilla extract
1 pinch of salt
Method
You’ll need: chopping board · knife · mixing bowl
Put the almond flour, peanut butter, maple syrup, vanilla extract and salt in a bowl. Mix everything into a compact dough.
If the dough seems too dry, work in a little iced water a splash at a time. It should be easy to shape but not sticky.
Roughly chop the chocolate. Fold it evenly into the dough.
Press the mixture into a block or shape individual bars straight away. Smooth the surface with your hands or a spoon.
Wrap the bars in baking paper or put them in a tin. Chill in the fridge until firmer.
To serve, enjoy the peanut cookie dough bars well chilled. For a firmer texture, take them out of the fridge just before eating.
Good to know
Tastes like cookie dough straight from the bowl. Just right when you want something sweet that doesn't need baking.
Swaps
Peanut butter → almond butter (contains vitamin E; tree nuts). Maple syrup → date paste (also provides fibre). Chocolate → cacao nibs (less sweet, pure cocoa flavour). Almond flour → finely ground oats (contain complex carbohydrates and beta-glucans; gluten-free oats if needed).
Allergens
Contains peanuts and almonds (tree nuts); depending on the chocolate, it may contain other allergens. For children, only in suitably sized pieces and if no allergy is known; in pregnancy, generally fine as long as all the ingredients agree with you.
