Pan-fried Brussels sprouts with chestnuts and apples
Pan-fried Brussels sprouts with chestnuts and apples, shallot, thyme and apple cider vinegar. A family-friendly vegan side for St Martin's goose and for autumn dinners.
Trim the Brussels sprouts, halve them and parboil in salted water for 5 minutes. Drain well.
Halve the chestnuts. Quarter the apple, remove the core and cut into wedges. Dice the shallot.
Fry the sprouts cut side down in the olive oil for 5 minutes until browned.
Add the shallot, chestnuts and apple and fry everything for 4 minutes, turning.
Deglaze with the apple cider vinegar and season with thyme, salt, pepper and nutmeg.
Serve the sprouts as a side with goose, duck or turkey.
Good to know
Brussels sprouts, chestnuts and apples are all in season in November and end up together in one pan here. The sprouts brown on their cut side, and the roasted flavours soften their bitterness. A side for St Martin's goose that becomes dinner with a fried egg.
Swaps
Chestnuts → walnuts (contains tree nuts). Apple → pear. Olive oil → butter (no longer vegan). Apple cider vinegar → lemon juice.
