At a glance

Ingredients

Method

You’ll need: frying pan · chopping board · knife · sieve · spatula

  1. Wash and peel the apples, remove the cores with an apple corer and cut them into thick rings.
  2. Mix the spelt flour with the baking powder and cinnamon. Stir in the oat milk, water and maple syrup until you have a smooth cinnamon batter.
  3. Gently heat the clarified butter in a frying pan. Pull the apple rings through the batter one at a time and let the excess drip off briefly.
  4. Fry the apple rings in batches over a medium heat until the batter is golden brown. Then turn them carefully and finish cooking.
  5. Lay the cooked apple rings briefly on kitchen paper so the excess fat can drain.
  6. Serve warm, sprinkled with a little cinnamon if you like, and enjoy straight away.

Good to know

Sometimes a simple recipe is exactly the right thing. Golden brown outside, soft and slightly tart inside – there's something very cosy about that.

Swaps

Spelt flour → oat flour (also provides fibre; contains gluten unless labelled gluten-free) | Oat milk → unsweetened almond milk (contains tree nuts) | Clarified butter → ghee (similarly heat-stable, often a little more aromatic; contains milk) | Maple syrup → unsweetened apple purée (fruitier sweetness)

Allergens

Contains gluten (spelt flour; the oat milk too, unless labelled gluten-free) and milk (clarified butter). Usually fine for children as long as the apple rings aren't served too hot, and in pregnancy the ingredients are fine at normal kitchen quality.
