Ingredients

Method

You’ll need: oven · baking tray · chopping board · knife

  1. Set aside 30 walnut halves and finely chop the rest of the walnuts.
  2. Mix the chopped walnuts with the almonds, bicarbonate of soda, cinnamon and salt.
  3. Melt the ghee, mix it with the maple syrup, egg and grated orange zest and stir in the nut mixture. Chill the dough for 15 minutes.
  4. Preheat the oven to 170 °C (150 °C fan). Shape 30 balls, place them on a baking tray lined with baking paper and press a walnut half on top of each one.
  5. Bake the cookies at 170 °C for 12 to 14 minutes, until the edges are golden brown.
  6. Leave them to cool on the tray for 10 minutes – they break easily while warm.

Good to know

Maple syrup and walnuts go together like Lebkuchen and cinnamon. These cookies need no flour – the ground almonds hold the dough together. Orange zest makes them Christmassy.

Swaps

Ghee → coconut oil. Walnuts → pecans. Maple syrup → honey. Orange → mandarin.

Cooking tips

Chop the walnuts by hand – in a blender they quickly turn oily. The cookies firm up as they cool.

Storage

Keeps for 2 weeks in a tin.
