Peel the sweet potato, cut it into cubes of about 1 cm and boil in lightly salted water for about 12 min until soft. Cut the turkey breast into strips and fry them in a frying pan with one tablespoon of olive oil until golden brown and cooked through. Wash the rocket, shake it dry and divide it between two plates. Mix the remaining olive oil with the balsamic vinegar, salt and pepper to make a dressing. Put the warm sweet potato cubes and turkey strips on the rocket and drizzle everything with the dressing. Good to know Anyone who says salads aren't satisfying hasn't tried this warm version yet. Natural, wheat-free and hearty.
Swaps Rocket → baby spinach (if you prefer a milder base with fewer bitter and peppery notes).
Cooking tips Alternatively, you can brush the sweet potato cubes with a little olive oil and roast them in the oven for deeper roasted flavours.
Storage Only pour the dressing over the salad just before eating, so the rocket doesn't wilt and go soggy.
Allergens Completely gluten-free, lactose-free, dairy-free and nut-free.
