  2. Cut the rump steak into 3 cm cubes and mix them with the rest of the olive oil, the smoked paprika and salt.
  3. Cut the peppers and onion into pieces of the same size.
  4. Thread the meat, peppers and onion alternately onto 12 short skewers.
  5. Fry the skewers in a griddle pan over a high heat for 6 to 8 minutes, turning, until the meat is browned on the outside and still pink inside.
  6. Leave the skewers to rest for 2 minutes and serve them with the chimichurri.

Good to know

In Spain, small skewers are part of every round of tapas. Here, you get rump steak with peppers and the Argentinian herb sauce chimichurri. You can make the sauce the day before, and the skewers only need 8 minutes.

Swaps

Rump steak → chicken breast (cook it right through). Cider vinegar → lemon juice. Peppers → courgette. Parsley → half coriander.

Cooking tips

Soak wooden skewers in water for 30 minutes so they don't burn. Fry in two batches so the pan stays hot.

Allergens

Gluten-free, no milk, egg or nuts. For children, leave out the chilli flakes. In pregnancy, cook the meat right through.
