Paleo St Martin's-style turkey leg with apples and mugwort
Paleo turkey leg in the style of a St Martin's goose, braised in the oven with apples, onions, mugwort and marjoram. A dinner for St Martin's Day with 45 g of protein per serving.
Preheat the oven to 170 °C (150 °C fan). Pat the turkey thigh dry and rub it with olive oil, salt, pepper, mugwort and marjoram.
Place the leg skin side up in a roasting tin, pour in the stock and cook in the oven at 170 °C for 60 minutes.
Quarter the apples, remove the cores and cut the onions into wedges.
Arrange the apples and onions around the leg, baste with the roasting juices and cook everything for a further 35 minutes at 170 °C.
Switch on the grill for the last 10 minutes, until the skin is crisp.
Take the meat off the bone, slice it and serve with the apples, onions and roasting juices.
Good to know
The flavour of a St Martin's goose without a whole goose: a turkey thigh braises with apples, onions and mugwort, the seasonings of the classic St Martin's goose. It's ready in a good hour and a half and serves four. Braised red cabbage with apple and potato dumplings go well with it.
Swaps
Turkey thigh → goose legs (30 minutes longer, skim off the fat). Mugwort → thyme. Apples → pears. Poultry stock → vegetable stock.
