Ingredients
300g parsnips
250g beetroot
2 tbsp olive oil
1 onion
200g beef mince
4 eggs
1 tsp paprika
1 tsp thyme
1/2 tsp salt
1 pinch of pepper
1/2 bunch of parsley
Method
You’ll need: frying pan · chopping board · knife
Peel the parsnips and beetroot and cut them into 1 cm cubes. Wear gloves, as the beetroot stains.
Fry the cubes in half the olive oil in a large frying pan over a medium heat, covered, for 12 min, until almost tender.
Peel and dice the onion. Push the veg to the edge, add the rest of the olive oil, the onion and the beef mince to the middle and fry everything for 5 min, breaking the mince up into crumbs.
Season with the paprika, thyme, salt and pepper and mix everything together.
Make four hollows in the pan, crack an egg into each, cover and let the eggs set for 5 to 6 min.
Chop the parsley and scatter it over before serving.
Good to know
A breakfast for cold weekends. In the pan, parsnips and beetroot turn brown and sweet at the edges. The eggs set right in the veg at the end.
Cut all the cubes the same size so they cook at the same time. The lid keeps the steam in the pan, so the roots soften without burning.
Storage
The veg and mince keep in the fridge for 3 days; fry them to reheat and crack in fresh eggs.
Allergens
Gluten-free, with no milk or nuts; contains egg. In pregnancy, let the eggs cook longer until the egg yolks are firm, and cook the mince all the way through.
