Paleo lamb and swede stew with carrots and rosemary
Paleo lamb and swede stew with braised lamb shoulder, swede, carrots and rosemary. A grain-free, dairy-free lunch for four days, with 31 g protein per serving.
Cut the lamb shoulder into 3 cm cubes and pat dry. Peel and dice the onions and garlic.
Brown the meat in the olive oil in a flameproof casserole over a high heat, in two batches for 5 min each.
Add the onions and garlic, stir in the tomato purée and toast everything for 2 min.
Pour in the stock, add the rosemary and bay leaf, cover and braise for 45 min.
Peel and dice the swede and carrots and add them to the pan. Simmer the stew for another 25 min, until the meat and veg are tender.
Remove the rosemary sprigs and bay leaf, season with salt and pepper and scatter with chopped parsley. In portions, the stew keeps in the fridge for 4 days.
Good to know
Swede is the underrated winter veg: mild, slightly sweet and lovely and smooth in a stew. With braised lamb and rosemary it makes lunch for the whole week. The stew tastes even better reheated.
