Ingredients

Method

You’ll need: chopping board · knife

  1. Cut a wedge out of the base of each chicory to remove the core, separate the leaves and halve the larger leaves crosswise.
  2. Peel the oranges with a knife and cut out the segments, catching the juice as you go.
  3. Roughly chop the pistachios.
  4. Whisk the orange juice, olive oil, lemon juice, honey, salt and pepper into a dressing.
  5. Toss the chicory and orange segments with the dressing and scatter over the pomegranate seeds and pistachios.

Good to know

After stock, meat and sauces, something fresh and slightly bitter is welcome. Chicory and orange are a classic winter salad, and pomegranate and pistachios make it festive. It's ready in twenty minutes.

Swaps

Chicory → radicchio (more bitter). Pistachios → walnuts. Honey → maple syrup (vegan). Pomegranate → cranberries.

Cooking tips

The core is the most bitter part, so cut it out generously. Only toss in the dressing just before eating so the leaves stay crisp.

Storage

Without dressing, the salad keeps in the fridge for 1 day, the dressing for 3 days.

Allergens

Contains pistachios; gluten-free, no milk or egg. Because of the honey, not for babies under 1 year old; suitable in pregnancy.
