Paleo beef bone broth with root veg
Paleo beef bone broth made from roasted beef bones, carrots, celery and leek, simmered gently for 8 hours. A warm snack to sip from a mug, or a base for soups.
Preheat the oven to 220 °C (200 °C fan). Roast the beef bones on a baking tray for 30 minutes until browned.
Wash the carrots, celery and leek and chop everything roughly. Halve the onion with its skin on and lightly crush the garlic cloves.
Put the bones, veg, cider vinegar, bay leaves, peppercorns and water into a large pan. Slowly bring everything to the boil and skim off the foam.
Simmer the broth very gently over a low heat for 8 hours with the lid ajar. Add the parsley for the last half hour.
Pour the broth through a sieve lined with a tea towel and salt it. Leave it to cool and lift the fat off the surface.
Heat the broth in portions and serve it in mugs, or use it as a base for soups.
Good to know
Bone broth mainly needs time; the actual work takes 20 minutes. Roasted bones make it dark and full of flavour. One big pot gives you a week's worth of soups.
