Method

You’ll need: oven · baking dish · chopping board · knife · grater

  1. Preheat the oven to 180 °C (160 °C fan). Generously core the apples and stand them in a baking dish.
  2. Grate the zest of the lemon. Knead the ground almonds, honey and lemon zest into a marzipan paste.
  3. Roughly chop the hazelnuts and dates and mix them with the marzipan paste and cinnamon.
  4. Fill the apples with the nut mixture, put a piece of coconut oil on top of each and pour the apple juice into the dish.
  5. Bake the apples for 30 to 35 minutes until soft, basting them now and then with the juice from the dish.
  6. Serve warm with the juice from the dish.

Good to know

Baked apple with marzipan is a Christmas market classic. Shop-bought marzipan is heavily sweetened; this one you make yourself from almonds and honey in two minutes. Hazelnuts and dates make the filling juicy.

Swaps

Honey → maple syrup. Hazelnuts → walnuts. Dates → raisins. Coconut oil → butter (then no longer strictly paleo).

Cooking tips

Tart apples such as Boskoop go soft in the oven and work well. Lightly score the skin all the way round so it doesn't burst.

Storage

Filled baked apples keep for 2 days in the fridge and can be reheated at 160 °C in 10 minutes.

Allergens

Contains almonds and hazelnuts (tree nuts); gluten-free, no milk or egg. Fine for children (but no honey for babies under one year old) and in pregnancy.
