Ingredients

Method

You’ll need: oven · baking tray

  1. Knead the almonds, most of the honey, the rosewater and grated orange zest into a smooth marzipan.
  2. Briefly beat the egg white with a fork and knead in half of it, until the mixture is soft but holds its shape.
  3. Preheat the oven to 170 °C (150 °C fan). Divide the marzipan into 20 pieces, roll them into finger-thick logs, pull them through the remaining egg white and roll them in the flaked almonds.
  4. Bend the logs into crescents, put them on a baking tray lined with baking paper and bake at 170 °C for 12 to 14 minutes, until the flaked almonds are golden brown.
  5. Leave the crescents to cool on the tray – they're still soft while warm.
  6. Melt the coconut oil, stir in the cocoa and the rest of the honey, dip the ends of the crescents in it and leave them to set in the fridge for 20 minutes.

Good to know

You'll know almond crescents from the bakery, usually made with shop-bought marzipan paste. Here you knead the marzipan yourself from almonds and honey in five minutes. Flaked almonds crunch on the outside, and the inside stays soft.

Swaps

Rosewater → 1 drop of bitter almond extract or vanilla. Honey → maple syrup. Orange → lemon. Chocolate tips → leave them out; the crescents taste good without them too.

Cooking tips

If the marzipan is too sticky, chill it for 15 minutes. Only bake the crescents until the almonds have colour, or they'll be dry inside.

Storage

Keeps for 2 weeks in a tin in a cool place.

Allergens

Contains almonds and egg; gluten-free, no milk or grains. Because of the honey, not for babies under 1 year old.
