Ingredients
2 sweet potatoes
1 tbsp olive oil
250g beef mince
1 onion
1 pepper
1 tbsp tomato purée
1/2 avocado
1/2 tsp salt
1 tsp cumin
1 tsp paprika
1/2 bunch of parsley
Method
You’ll need: air fryer · frying pan · chopping board · knife · wooden spoon
Halve the sweet potatoes lengthways, brush the cut sides with half the olive oil and salt them lightly.
Cook the sweet potatoes cut side up in the air fryer at 200 °C for 22 to 25 minutes, until soft.
Dice the onion and pepper. Fry the beef mince in the rest of the olive oil in a frying pan for 5 minutes until crumbly, add the onion and pepper and fry everything for another 4 minutes.
Stir in the tomato purée, cumin, paprika and the rest of the salt and simmer for 2 minutes.
Loosen the insides of the sweet potatoes a little with a fork and spoon in the mince. Dice the avocado and scatter it over the top with chopped parsley.
Good to know
Here the sweet potato is plate and side dish in one. While it softens in the air fryer, the mince fries in the pan. At the end everything comes together, with no extra pan for rice or pasta.
