Method

You’ll need: air fryer · chopping board · knife · sieve · pestle and mortar

  1. Peel the potatoes, cut them into 1 cm thick sticks and soak them in cold water for 15 min.
  2. Finely chop the rosemary needles and grind them with the salt using a pestle and mortar.
  3. Drain the potatoes and dry them thoroughly with a tea towel. Melt the beef dripping and toss it with the potatoes and paprika.
  4. Cook the fries in the air fryer at 200 °C for 22 to 25 min, until golden brown. Shake the basket every 7 min.
  5. Toss the hot fries with the rosemary salt straight away.
  6. Serve the fries straight from the basket.

Good to know

Beef dripping is one of the trending fats of 2026: in the US, many fast-food places are frying in animal fat again instead of plant oils, just like they used to. In the air fryer, 30 g of dripping is enough for a kilo of potatoes. The flavour is reminiscent of funfair fries.

Swaps

Beef dripping → ghee or clarified butter (similarly heat-stable; both contain milk). Potatoes → sweet potatoes (5 min shorter). Rosemary salt → garlic powder and sea salt. Paprika → smoked paprika.

Cooking tips

Soaking draws starch out of the potatoes, so they don't stick together and turn out crispier. Only fill the basket halfway, or the fries will cook unevenly.

Storage

Beef dripping keeps for 3 months in a jar in the fridge; the fries are best eaten fresh.

Allergens

Free from gluten, milk, egg and nuts. Beef dripping isn't vegetarian.
