Good to know

Sometimes it doesn't take much to make veg taste really good. This oven dish is simple, warm and just right for days when things should be easy.

Swaps

Parmesan → pecorino (also provides protein, stronger in flavour). Lemon juice → white balsamic vinegar (mild acidity, a little more aromatic). Olive oil → avocado oil (heat-stable and mild). Green asparagus → Tenderstem broccoli (also provides fibre and vitamin C).

Allergens

Contains milk (parmesan). Usually well suited to children if the asparagus is cooked soft enough. Also fine in pregnancy, as long as the parmesan is made from pasteurised milk or is sufficiently matured.
