Ingredients
300 g beef mince
1 tin black beans (240 g)
200 g tortilla chips (without seed oils, e.g. made with avocado oil or olive oil)
Preheat the oven to 200 °C (180 °C fan). Finely dice the onion, chop the garlic, cut the tomatoes into small pieces, slice the avocado and drizzle it with a little lime juice.
Fry the beef mince in a frying pan with olive oil until browned and crumbly. Add the onion and garlic and fry briefly, then stir in the cumin and paprika.
Fold the black beans into the mince and heat everything through briefly. Season to taste with salt and pepper.
Spread the tortilla chips on a baking tray or in an ovenproof dish. Spoon the mince and bean mixture on top, sprinkle with the cheese and scatter over the jalapeños.
Bake at 200 °C for 8–10 min, until the cheese has melted and is lightly golden.
Take out of the oven and serve with the tomatoes, avocado, soured cream, coriander and lime juice.
Good to know
This is the kind of food that goes straight to the middle of the table. Savoury, crunchy, juicy – and done in a few steps.
Swaps
Cheddar → goat's cheese (often a little stronger in flavour, so a smaller amount is usually enough); soured cream → Greek yoghurt (more protein); beef mince → chicken mince (usually a little leaner)
Allergens
Contains milk; depending on the chips, there may be traces of gluten, so check the label. For children, leave out the jalapeños; in pregnancy, use pasteurised soured cream and make sure the mince is cooked right through. Contains: gluten.
