Ingredients

Method

You’ll need: oven · baking dish · chopping board · knife · grater

  1. Pat the turkey breast dry. Wash the lemon in hot water, finely grate a little of the zest and squeeze the juice; rinse the thyme briefly.
  2. Rub the turkey breast with olive oil and season with sea salt, black pepper, lemon zest and a little lemon juice. Lay the thyme on top and leave to marinate briefly.
  3. Put the turkey breast in an ovenproof dish and pour in a splash of white wine or water. Cook in a preheated oven at 180 °C (160 °C fan) for 35–40 min, until the meat is cooked through but still juicy.
  4. Baste the turkey breast with the juices once during cooking. Leave to rest briefly at the end so the juices can settle.
  5. Season the juices from the dish with a little more lemon juice. Add a little more black pepper or thyme if you like.
  6. Slice the lemon turkey breast, pour over the hot juices and serve straight away.

Good to know

Sometimes the simplest oven dishes are the ones you come back to most. This lemon turkey breast turns out aromatic, juicy and pleasantly fresh in flavour.

Swaps

Turkey breast → chicken breast (similar protein content, mild flavour); white wine → vegetable stock with no sugar on the label (alcohol-free and savoury); thyme → rosemary (strong flavour, also contains plant compounds); olive oil → avocado oil (heat-stable, mainly monounsaturated fats)

Allergens

The recipe is free from the major allergens, apart from possible sulphites in the white wine. For children and in pregnancy, use water instead of wine and cook the turkey breast right through.
