Ingredients
2 cod fillets
50g almond flour
1 unwaxed lemon
2 tbsp olive oil
1 clove of garlic
200g green asparagus
1 bunch of parsley
1 pinch of sea salt
Method
You’ll need: oven · baking tray
Preheat the oven to 200 °C (180 °C fan) and line a baking tray with baking paper. Wash the green asparagus, snap off the woody ends, lay it on the tray, drizzle with olive oil and season lightly with salt.
For the crust, mix the almond flour with the lemon zest, parsley, garlic, olive oil and sea salt. The mixture should be slightly moist and hold together well.
Pat the cod fillets dry, lay them next to the asparagus on the tray and season lightly with salt. Press the lemon and herb mixture firmly onto the top.
Bake everything at 200 °C for 12–15 min until the crust is golden brown and the cod gives gently when pressed. The asparagus should be tender but still have a little bite.
If the crust needs more colour, move the tray up a shelf for a moment at the end. Then let the fish rest briefly so the crust holds together.
Arrange the baked cod with the asparagus and serve with a squeeze of fresh lemon juice.
Good to know
I like an oven dish like this on days when things should be uncomplicated but still taste like a proper meal. The cod stays tender, and the top turns pleasantly crisp and fresh.
Swaps
Cod → coley (similar protein content, usually a little cheaper). Almond flour → ground hazelnuts (also provide fibre and unsaturated fatty acids). Green asparagus → broccoli (more fibre and vitamin C). Parsley → dill (goes well with fish and also brings plant compounds).
Allergens
Contains fish and tree nuts (almond flour); generally suitable for children if the fish is free of bones, mildly seasoned and the texture suits them; in pregnancy, fine with fish that is cooked right through.
