  4. Peel the mandarins and divide them into segments, and stir the low-fat quark until smooth.
  5. Serve two waffles per person with low-fat quark and mandarin segments.

Good to know

When there's frost outside, it's waffles on Sunday. Orange and cinnamon give them a wintry feel, and the quark with mandarins adds freshness.

Swaps

Low-fat quark → skyr or yoghurt. Mandarins → orange segments. Spelt flour → half wholemeal spelt flour. Butter → coconut oil.

Cooking tips

Let the batter rest so the waffles turn out fluffy. Lay finished waffles side by side on a rack – stacked, they go soft.

Storage

Once cooled, they keep for 2 months frozen; crisp them up in the toaster.

Allergens

Contains gluten (spelt), milk and egg; suitable for children, but no honey for babies under one year old.
