Oat flour and apple purée pancakes
Oat flour and apple purée pancakes with egg, almond milk and Ceylon cinnamon: a simple, warm recipe with oat flour, apple purée and gentle sweetness without refined sugar.
Mix the oat flour, cream of tartar baking powder and Ceylon cinnamon thoroughly in a bowl. If you don't have oat flour, finely blend some oats first.
Add the apple purée, organic egg and almond milk and whisk everything into a smooth, fairly thick batter.
Leave the batter to rest briefly so the oat flour can swell. This makes the mixture more even and the pancakes easier to turn.
Heat a good non-stick frying pan over a medium heat and brush it thinly with virgin coconut oil. Add small portions of batter.
Cook the pancakes until bubbles appear on the surface and the edges look matt. Then turn them carefully and cook the second side until golden brown.
Serve warm, for example with a little apple purée, natural yoghurt (plant-based to keep it dairy-free) or chopped nuts.
Good to know
These pancakes are uncomplicated and pleasantly moist. The batter is quick to stir together, and the texture is nice and soft – just right for everyday.
Swaps
Almond milk → whole milk or unsweetened oat milk (whole milk provides protein, oat milk a little fibre; whole milk isn't dairy-free). Organic egg → 2 tbsp yoghurt plus 1 tsp psyllium husk (binds the batter well; plant-based yoghurt to keep it dairy-free). Coconut oil → ghee (not dairy-free) or avocado oil (heat-stable for frying). Apple purée → mashed banana (also provides natural sweetness and a little potassium).
Allergens
Contains egg, tree nuts (almond milk) and gluten (oats), unless the oat flour is labelled gluten-free. Usually suitable for children; in pregnancy no concerns with fresh, sound ingredients.
