Ingredients
50g pistachios
3 tbsp almond butter
50g desiccated coconut
50g cocoa powder
1 tbsp maple syrup
4 tbsp coconut oil
1 pinch of salt
Method
You’ll need: frying pan · grater
Gently melt the coconut oil and stir in the cocoa powder and maple syrup until you have a smooth chocolate mixture.
Spread some of the chocolate in a chocolate mould or small silicone mould and chill briefly so the first layer sets.
Toast the pistachios and desiccated coconut in a frying pan until golden brown and leave to cool briefly.
Mix the toasted pistachios and desiccated coconut with the almond butter and salt into a firm filling.
Spread the filling over the set chocolate layer and cover everything with the remaining chocolate. Chill the mould until the chocolate is firm.
Turn the no-bake pistachio chocolate out of the mould and serve well chilled.
Good to know
This chocolate has exactly what you want from a quick sweet snack: creamy, crunchy and full of flavour. I especially like the contrast between the delicate shell and the nutty filling.
Swaps
Almond butter → cashew butter (milder flavour, similarly creamy). Pistachios → hazelnuts (also contain vitamin E, a stronger roasted flavour). Maple syrup → date paste (natural sweetness plus a little fibre).
Allergens
Contains tree nuts (pistachios, almond butter), so it isn't suitable for anyone with a nut allergy. Because of the firm texture, only offer it to children when age-appropriate; in pregnancy, the ingredients in normal kitchen amounts are generally fine.
