Ingredients
150 g almonds
10 dates
400 g coconut milk
2 mangoes
2 tbsp lime juice (from an unwaxed lime)
1 pinch of salt
1 tsp agar agar
Method
You’ll need: saucepan · tart tin · blender · chopping board · knife · wooden spoon
Blitz the almonds, dates and salt in a blender into a sticky mixture. Press the base into a tart tin and chill for 30 min.
Peel the mangoes, cut the flesh away from the stones and purée finely with the lime juice.
Put the mango purée into a saucepan with the coconut milk and agar agar and stir well so no lumps remain.
Bring the mixture to the boil, stirring, and let it simmer briefly so the agar agar sets reliably.
Pour the cream over the chilled base and leave the tart to set in the fridge.
To serve, cut into slices and enjoy well chilled.
Good to know
This tart is creamy, fresh and pleasantly uncomplicated. It looks special but doesn't cause any stress in the kitchen.
Swaps
Almonds → cashews (milder flavour, also unsaturated fats). Dates → dried figs (also contain fibre). Mango → passion fruit purée (a fresher, tarter flavour). Coconut milk → coconut yoghurt.
Allergens
Contains tree nuts (almonds). For small children, only serve in an age-appropriate texture. In pregnancy, the recipe is generally fine when the ingredients are fresh and prepared hygienically.
