At a glance Serves 8 Prep time: 20 min No cooking needed Total time: 20 min Calories: 570 kcal per serving Protein: 10 g Fat: 35 g Carbs: 70 g Ingredients 100 g cashews 100 g dates 80 g rolled oats 200 ml coconut milk 3 unwaxed limes 30 g coconut oil 2 tbsp desiccated coconut Method You’ll need: tart tin · blender · chopping board · knife · grater
Soak the cashews in cold water – this makes the filling creamier. Blitz the dates and oats in a blender to a sticky mixture. Press it into the tart tin and chill briefly until the base is firm. Blend the soaked cashews finely with the coconut milk, coconut oil and lime juice until the cream is smooth. Spread the cream over the base, smooth it and sprinkle with lime zest. Leave the tart to set in the fridge until the filling is firm and chilled. Garnish with desiccated coconut before serving and cut it straight from the fridge. Good to know This tart is cool, creamy and pleasantly fresh. It looks special but takes hardly any effort. Just right when the oven should stay off.
