Roughly chop the cashews in a food processor or blender, so they still have some bite.
Stone the dates and add them to the cashews with the desiccated coconut, matcha powder, melted coconut oil and sea salt. Blend until the mixture is sticky and holds together well.
Line a small rectangular tin with baking paper and tip the mixture in.
Press the mixture down firmly and evenly with your hands or the back of a spoon. Scatter the chia seeds on top and press them lightly into the surface.
Chill the tin until the mixture is firm enough to cut.
Cut into bars and serve well chilled.
Good to know
When things need to be quick, fridge bars like these are worth their weight in gold. The texture is soft, compact and pleasantly moist. And the subtle matcha note makes them a little more special than classic date bars.
Swaps
Cashews → almonds (more fibre and vitamin E). Medjool dates → dried figs (more fibre and calcium). Coconut oil → almond butter (a little more protein and unsaturated fatty acids). Chia seeds → ground linseed (fibre and omega-3 fatty acids).
Allergens
Contains tree nuts and, depending on the matcha or processing, may contain traces of other allergens; for children, better in small portions because of the caffeine, and during pregnancy it makes sense to keep an eye on your total daily caffeine from all foods.
