Mummy salmon in a potato wrap with pea purée
Mummy salmon: salmon fillets wrapped in potato strips and baked in the oven, with caper eyes and minted pea purée. A pescatarian Halloween dinner with 33 g of protein.
Preheat the oven to 200 °C (180 °C fan). Peel the potatoes and cut them into long, thin strips with a spiralizer or vegetable peeler.
Toss the potato strips with the olive oil, salt and pepper. Cut the salmon into 4 pieces and season with salt and grated lemon zest.
Wrap the potato strips criss-cross around the salmon pieces like mummy bandages, leaving a narrow gap at the top for the eyes.
Put the mummies on a baking tray lined with baking paper and bake at 200 °C for 20 to 22 minutes, until the potatoes are golden brown.
Cook the peas in a little salted water for 4 minutes, drain and blend roughly with the butter, mint and lemon juice.
Put two capers in each gap as eyes and serve the mummies on the pea purée.
