Ingredients
150 g chickpea flour
150 ml water
50 ml oat milk
1 tbsp maple syrup
1 tbsp coconut oil
2 tbsp coconut sugar
5 tbsp apple purée
1 tsp cinnamon
1 pinch of salt
Method
You’ll need: frying pan · mixing bowl · spatula
Whisk the chickpea flour with the water, oat milk, apple purée, maple syrup, cinnamon and salt in a bowl until smooth. Leave the batter to stand briefly so the flour can swell.
Gently heat the coconut oil in a large frying pan. Pour in the batter and let it set over a medium heat until the underside takes on a little colour.
Break the pancake into rough pieces with a spatula and turn them. Keep frying until the pieces are lightly browned outside and still moist inside.
Sprinkle over the coconut sugar and toss briefly in the pan so it melts slightly. This gives the mock Kaiserschmarrn a delicate caramel note.
If the pieces still seem too soft, cook them a little longer. Finally, add a little extra cinnamon if you like it spicier.
Serve hot straight away, ideally with some apple purée on the side.
Good to know
When it needs to be quick and you still want something warm on your plate, this recipe is just right. It's simple, pleasantly sweet and a real joy even without a classic batter.
Swaps
Oat milk → almond milk (often a little lighter in flavour) | maple syrup → date paste (less free sweetness, plus some fibre) | coconut sugar → mashed banana (saves added sugar and brings potassium)
Allergens
Depending on the oat milk, it contains oats, and it's gluten-free with certified products. Chickpeas can feel unfamiliar if your stomach is sensitive; usually fine for children in small portions, and during pregnancy the ingredients are fine in normal kitchen use.
