Ingredients

Method

You’ll need: saucepan · chopping board · knife · mixing bowl · sieve

  1. Rinse the quinoa thoroughly and cook it in water until the grains are soft and the liquid has been absorbed. Then leave it to cool a little.
  2. Halve the cherry tomatoes, dice the cucumber small and cut the red onion into thin rings. Finely chop the parsley.
  3. Halve the Kalamata olives and cut the feta into cubes. Stir the olive oil, lemon juice and oregano into a dressing and season to taste with salt and pepper.
  4. Put the quinoa in a large bowl and mix with the cherry tomatoes, cucumber, red onion, olives, feta and parsley. Pour the dressing over.
  5. Fold everything together gently so the feta keeps its shape. Leave to stand briefly so the flavours come together.
  6. To serve, season the salad again and spoon it onto plates while fresh. It's also good for making ahead.

Good to know

A salad like this is little effort and still tastes like a proper meal. Fresh, salty, lemony – and still good the next day.

Swaps

Feta → goat's cheese (similarly full-flavoured; in pregnancy, choose a pasteurised one without a white rind) | Quinoa → millet (gluten-free, contains minerals) | Kalamata olives → avocado (also provides unsaturated fatty acids, and a creamier texture) | Parsley → mint (a fresh herby note, also aromatic)

Allergens

Contains milk (feta). Good for children if you go easy on the onion; suitable in pregnancy as long as the feta is made from pasteurised milk.
