Ingredients

Method

You’ll need: frying pan · chopping board · knife

  1. Halve the chicken breast fillets horizontally so they cook evenly, then season with salt and pepper. Cut the onion into wedges, halve the cherry tomatoes and thinly slice the garlic.
  2. Heat the olive oil in a large frying pan and brown the chicken on both sides until golden. Then take it out of the pan briefly.
  3. In the same pan, gently soften the onion and garlic until fragrant and slightly soft.
  4. Add the cherry tomatoes, Kalamata olives, rosemary and balsamic vinegar. Simmer everything until the tomatoes burst and a light sauce forms.
  5. Return the chicken to the pan and finish cooking it in the sauce until cooked through in the middle. Scatter the basil over at the end.
  6. Serve straight from the pan, with a little extra basil on top if you like.

Good to know

A pan dish like this makes for a relaxed evening. Little effort, lots of flavour, and in the end everything lands on your plate warm and fragrant.

Swaps

Chicken breast → skinless chicken thighs (also provide iron, usually juicier). Kalamata olives → green olives (similar monounsaturated fatty acids, a little milder in flavour). Balsamic vinegar → lemon juice (fresher, without extra sweetness). Olive oil → avocado oil (heat-stable, also contains unsaturated fatty acids).

Allergens

The dish is naturally gluten-free and dairy-free; the main things to watch are individual sensitivities to olives, garlic or onion. Season mildly for children, and in pregnancy make sure the chicken is cooked right through.
