Method

You’ll need: frying pan · chopping board · knife · spatula

  1. Pat the chicken breast dry and cut it into thin strips. Wash the courgette and dice it.
  2. Stir the olive oil with the oregano, lemon juice, crushed garlic, salt and pepper. Briefly turn the chicken in it.
  3. Heat a frying pan and fry the chicken all over until cooked through and lightly browned. Then take it out of the pan.
  4. Roast the courgette in the same pan until slightly softer and lightly charred. Meanwhile, halve the cherry tomatoes and roughly tear the basil.
  5. For the dressing, stir olive oil with lemon juice, salt and pepper. Loosely mix the chicken, courgette and cherry tomatoes.
  6. Sprinkle with feta and basil, pour over the dressing and serve the salad slightly warm.

Good to know

A salad like this feels like little effort and good food. Warm, fresh and pleasantly satisfying. Just right when it needs to be simple.

Swaps

Feta → goat's cheese (also provides protein and calcium); chicken breast → turkey breast (similar protein and lean); courgette → aubergine (more fibre, slightly stronger flavour); basil → parsley (also provides vitamin K and fresh herby notes).

Allergens

Contains milk (feta). Suits children well if the chicken is fully cooked and moderately seasoned; during pregnancy, make sure the feta is pasteurised and keep good kitchen hygiene.
