Matcha macadamia protein fudge with white cacao butter, premium matcha, macadamias and vanilla protein powder – creamy, nutty and pleasantly intense.
You’ll need: saucepan · chopping board · knife · mixing bowl
This is the kind of little fridge luxury you're happy to cut yourself a piece of. Smooth, creamy and with that subtle bitter note that makes everything feel more grown-up.
White cacao butter → creamed coconut (creamier, milder flavour) Macadamia nuts → cashews (cheaper, mild and creamy)
Contains tree nuts and, depending on the protein powder, possible allergens such as soya. Because of the caffeine in matcha, only give children small amounts; in pregnancy it's important to keep caffeine moderate.
Matcha mainly provides polyphenols, especially catechins, plus naturally occurring caffeine. The exact amounts vary a lot with cultivation, harvest and quality.
Macadamias mainly contain monounsaturated fats, especially oleic acid and palmitoleic acid, plus smaller amounts of saturated and polyunsaturated fats.
White cacao butter mainly provides fat and aroma, but hardly any of the plant compounds you'd know from cocoa mass or dark cocoa. That's why it's interesting for texture and flavour, but contains fewer polyphenols.
That varies from person to person: in sensitive people, the caffeine can encourage restlessness or an upset stomach. If you react sensitively, start with small portions.
Macadamias contain manganese, copper and smaller amounts of magnesium and B vitamins, among others. The amounts aren't especially high – here, the nuts are mainly about crunch and buttery flavour.
