Ingredients
3 tbsp chia seeds
200 ml oat milk
1 tbsp maple syrup
20 g chopped almonds
1 tsp matcha powder
1 tsp almond butter
Method
Put the matcha powder in a glass and stir it with a little oat milk until smooth and there are no more lumps.
Stir in the rest of the oat milk and the maple syrup. Add the chia seeds and mix everything thoroughly.
Leave the mixture to swell briefly, then stir it again vigorously so the chia seeds are evenly distributed.
Chill the glass until the pudding has clearly thickened. Overnight, the texture becomes especially creamy.
Before eating, spoon the almond butter onto the pudding and spread it out a little.
Sprinkle with chopped almonds and serve well chilled.
Good to know
When your morning can be quiet and green, this is my jar. Creamy, nutty and pleasantly bitter – without much effort.
Swaps
Oat milk → unsweetened almond milk (usually slightly fewer carbs). Maple syrup → date paste (also adds a little fibre). Almonds → walnuts (more omega-3 fatty acids). Almond butter → cashew butter (milder flavour, often a little creamier).
Allergens
Contains tree nuts from the almonds; oat milk contains gluten unless it's certified gluten-free. Because of the caffeine in matcha, only partly suitable for children, and during pregnancy better in small amounts, keeping an eye on your total caffeine intake. Contains: gluten (oats).
